Buttermilk Pancakes

We had the missionaries over for dinner the other day and I decided to make breakfast for dinner. I usually just buy the cheap pancake mix from the grocery store and then wonder why my they don't ever taste that great, or I gag on them because they are so dry. Since it was a "special" meal, I decided to make my batter from scratch, and they were so yummy! Here is the recipe:

Buttermilk Pancakes

2 eggs
2 C. buttermilk
2 C. all-purpose flour
2 Tbls. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
4 Tbls. butter (melted)
1/2 tsp. vanilla

In a bowl using an electric mixer, beat the eggs until frothy, 2-3 minutes. Add remaining ingredients and mix until mixture is just smooth.

**Really easy. One thing though, the batter is really thick. I had to thin it out a little with milk in order for it to pour. If you have a large ice cream scoop (one of the springy ones), I would use that to drop the thick batter onto the grill. I only have a small scoop, so it worked better for me to thin it out a little.
